Stuffed Mushrooms Recipe

Yield: 55-60 mushrooms

Stuffed Mushrooms Ingredients:

  • 55 - 60 medium sized mushrooms

  • 1 large green pepper, finely chopped

  • 3 medium onions, finely chopped

  • 2 garlic cloves, minced

  • 1/5 ounces real bacon bits

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 stick butter or margarine

  • 3/4 cups extra virgin olive oil

  • 1 1/2 cups seasoned (or unseasoned) bread crumbs

Stuffed Mushrooms Directions:

  1. Wash mushrooms and pull the stems from them. Set caps aside.

  2. Finely chop mushroom stems.

  3. Melt a stick of butter or margarine in a frying pan.

  4. Add peppers, onions and garlic. Saute for 10 minutes.

  5. Add chopped mushroom stems, olive oil, and spices to the frying pan.

  6. Saute for another 15 minutes,

  7. Remove from heat.

  8. Mix in bread crumbs. Stir until well mixed. Stuffing should be moist.

  9. Fill mushroom caps with a generous portion of stuffing.

  10. Line a cookie sheet with aluminum foil.

  11. Place mushrooms with stuffing onto an aluminum foil lined cookie sheet.

  12. Bake in oven at 350 ° F for 20 - 25 minutes until the caps are hot and begin to soften a little.

  13. Serve hot.
